FISH FARM THALHAMER MÜHLE

For more than 35 years, the fish farm at Thalhamer Mühle has enjoyed an excellent reputation that extends far beyond the borders of Amerang. Even as far as regions such as Tyrol, the Salzburg region and Alsace, the seedlings and fish are supplied by Florian Persch, a native of Munich. The aquatic inhabitants thrive in crystal clear spring water from the moment of the egg until they are delicately served as food fish. Florian Persch is not only an experienced master fishkeeper, but also a trainer for aspiring fishkeepers. In 2018, he took over the thriving business from his mentor Karl Heinz Kreissig (*1948). The latter provided him with a wealth of practical knowledge, which now forms the basis for Florian's future successes. A special highlight is the supply of exquisite char to our gourmet restaurant "es:senz". These first-class fish are processed into exquisite culinary delights by Edip Sigl, our executive chef at the DAS ACHENTAL resort.

MASTER BEEKEEPER STEPHAN WALTER

In the middle of the picturesque scenery of Chiemgau, directly on our resort grounds - a popular vacation destination - the bees have the opportunity to produce the finest honey, high-quality propolis and purest beeswax under the expert guidance of master beekeeper Stephan Walter. Stephan Walter devotes himself with great dedication to his biennial companions, caring for them lovingly around the clock, allowing them to do their best. You are cordially invited to learn more about the busy bees and their fascinating world on a bee walk, which takes place every Friday in summer on our resort. This will give you a comprehensive insight into the life of the bees and afterwards you can enjoy the products made by them in our house. As a farewell gift at check-out, you will also receive a small gift to take a piece of Chiemgau home with you and continue to enjoy it there. Our resort in the heart of the Chiemgau invites you to experience the wonderful symbiosis between man and bee as well as to taste the fruits of this cooperation to the fullest.

NURSERY JOLLING

Within Solawi Jolling eG, small, artisanal organic farms from the region come together on the one hand, while people interested in regional organic food form a community on the other. Together, they actively take responsibility for the entire value chain, starting with the seed and ending with the finished vegetable. In doing so, they consciously bypass organic wholesalers and their price fixing. At the same time, they share the risks that have always been part of agricultural work: Challenges such as frost, heavy rains, hail, droughts, disease, short harvest windows, and the rapid perishability of produce. This sustainable concept finds its inspiration in our gourmet chef Edip Sigl, who loves to use seasonal vegetables for his cooking. Edip Sigl and his team stand behind this approach, which not only follows the principles of sustainability, but also creates a close bond between producers and consumers.

SEPP'N BAUER

On the sustainable and nature-oriented organic farm in Bernau am Chiemsee, the Simon family offers its valued guests and customers a wide range of services in the context of small-scale agriculture. Their efforts go a long way to guarantee a diverse experience. For example, you can experience up close how the Pinzgauer cattle live in a loving suckler cow and pasture management on the lush green mountain meadows. Likewise, the family cares about the well-being of the pigs, which grow up in generous straw keeping.
The chickens, ducks and geese benefit from natural free-range husbandry and are grain-fed with regional grains, creating optimal conditions for high-quality food production. The Simon family is proud to set these standards.
Edip Sigl, our dedicated gourmet chef, especially values the partnership with this supplier. This is because quail, eggs and meat come from a farm that cares about animal welfare from start to finish. Our collaboration thus contributes to animal welfare and the quality of our products, which is of key importance to us.

ACHENTAL WAGYU

Between the idyllic Chiemsee and the imposing Kampenwand, directly in front of the entrance to the resort DAS ACHENTAL, stretch the lush meadows and fields where the Wagyu cattle live and thrive. Christian Kreuz, the breeder of this extraordinary breed, has a deep love for his magnificent animals. When they enter the pastures, they leap towards him full of joy - a sight that always brings a smile to his face.
Working closely with a Wagyu breeder like Christian Kreuz is a special honor for Edip Sigl. The fact that this cooperation takes place right here in Chiemgau, at the gates of our resort, fills our star chef with pride. The opportunity to work closely with such a dedicated breeder and at the same time enjoy the proximity to such a breathtaking landscape is a true enrichment for our team.

CHIEMSEE FISHING LEX

Since the year 1857, the family has been running its Chiemsee fishery in continuous succession, now in the 6th generation, making it one of the most traditional fishing families on Lake Chiemsee. The master fishermen Thomas and his son Florian Lex are at the heart of this small business. Recently, Florian's brother Tassilo has also joined the team. And, of course, we must not forget Mama Sylvia, who plays a leading role in sales, and Grandpa Holmer, who is still actively involved in preparing the fish and tending the nets. This unique family business thus unites three generations who together contribute to its success.
The fish, including the Chiemsee roe and eel, come exclusively from Lake Chiemsee and are thus obtained in the absolute wild. Thanks to the regular and controlled stocking measures of the fishery cooperative, the Lex family can guarantee that the Chiemsee fish come from a sustainable fishery.

CHIEMSEELIEBE – PRODUCER OF OUR COSMETICS RANGE ‘CHIEMGAU PUR’

The cosmetics company from Grabenstätt has created wonderful hand soaps, shower gels, shampoos and a bath salt especially for Das Achental. The high-quality creams, serums and soaps from ChiemseeLiebe are made with natural premium water from the Petrusquelle in Siegsdorf and lovingly handcrafted. If you are interested, you can purchase the sustainable cosmetic products in the best organic quality directly from us in the Achental Shop.

BARULI – OUR COFFEE SUPPLIER FROM STEIN AN DER TRAUN

Our coffee supplier Uli Niedersteiner runs his own roastery near Traunstein. That he has turned his passion for coffee into a profession is something you can taste in each of the wonderfully aromatic specialities from the Baruli coffee roastery. The majority of beans are organic and are fairtrade. We support this too of course and all the espresso machines in our rooms have 100% compostable coffee capsules from the Baruli Roastery.

BIOTEAQUE – OUR TEA SUPPLIER FROM TRAUNSTEIN

Tea-makers Bioteaque make a point of combining high-quality, organic tea with a cheery Alpine outlook on life. The ingredients for the unique Alpine herb blends grow naturally up above 2500 metres altitude. We serve you exceptionally delicious teas and a tea variety specially created for Das Achental at breakfast, to enjoy with cake and in your room.

MAXLRAINER – OUR BEER SUPPLIER FROM MAXLRAIN

The private Schlossbrauerei in Maxlrain is a genuine artisan business with a small committed team of brewers who brew sixteen different varieties of top-class beer. The range of speciality beers - which have received awards from the ‘DLG’ (German Agricultural Society) - ranges from classic lagers to wheat beers, Pilsners and black beer, to seasonal and alcohol-reduced and non-alcoholic speciality beers – and are a superb complement to the delicious regional foods we serve you in Das Achental.

KYMSEEWHISKEY – OUR WHISKY SUPPLIER FROM GRABENSTÄTT

Located right in the Achendelta conservation area, with its unspoilt moss areas and the adjoining moors, is Kymsee distillery. A fine Bavarian single malt is distilled here in the only whisky distillery in Chiemsee, which stands out thanks to its bold, red-gold colour. It is very smooth, yet still packs a punch and has an intense aroma, comprising notes of vanilla and chocolate, honey and fine hazelnut. Get cosy in the Achental Bar & Lounge and savour this fine single malt.
